In the sugar industry, micro-organisms such as Leuconostoc intestinalis and Streptococcus catalyze sucrose to produce glucose by secreting glucan sucrase, and glucose further polymerizes to form dextran. Dextran is a polysaccharide polymer with high molecular weight, and the type of glucoside bond is mainly α-1, 6-glucoside bond.
