Application & Funtion

In the sugar industry, micro-organisms such as Leuconostoc intestinalis and Streptococcus catalyze sucrose to produce glucose by secreting glucan sucrase, and glucose further polymerizes to form dextran. Dextran is a polysaccharide polymer with high molecular weight, and the type of glucoside bond is mainly α-1, 6-glucoside bond. The presence of dextran will have a serious impact on sugar production, significantly increase the viscosity of the sugar solution, reduce the filterability of the sugar solution, and generate abnormal crystals when sucrose crystallizes, increasing the cost of sugar production and affecting the quality of the product. The use of dextranase can effectively improve the heating speed of sugarcane juice, shorten the time of clarification and crystallization, eliminate the adverse effects of crystallization, so as to improve the production efficiency and yield of sugar.
