Transglutaminase (TGase) is a thiolase that promotes intramolecular cross-linking, intermolecular cross-linking, and cross-linking between proteins and amino acids. TGase can catalyze the formation of glutamine residues in proteins γ- Amide and lysine groups ε- Amide transfer reaction between amino groups, forming ε- ( γ- The heteropeptide bond between glutamine and lysine alters the functional properties of proteins. TGase has good pH stability, with an optimal pH of 6.0, but it has high activity in the pH range of 5.0-8.0; At the same time, TGase also has high thermal stability, with an optimal temperature of around 50 ºC and high activity at 45-55 ºC.

Transglutaminase (TG) is an enzyme which can catalyze the reaction of transamination. It catalyzes the L-Lysine's r-aroylamino-hydroxybutyrate binding to the glutamic acid's. So the covalent crosslinking among the proteins or peptides is happened and the polymer of covalent compounds is formed. In the food industry, TG is applied to improve several functional characteristics of meat and protein products, such as improving the meat's structure, gel characteristic, elasticity, keeping the water and grease and so on. At the same time, the lysine is protected which preventing the maillard reaction.
