Application & Funtion

Invertase is an enzyme that catalyzes the hydrolysis of sucrose and belongs to the glycosidase family. It breaks down sucrose into glucose and fructose, and is also known as sucrose hydrolase. Sucrase is widely present in the tissues of many microorganisms, plants, and animals.

Invertase has high catalytic efficiency and broad substrate specificity.
