Gardenia blue pigment is a natural food pigment extracted from the fruit of the Rubiaceae plant Gardenia. The main components are carotene crocin and crocetin. The product is a light gray to dark blue powder, easily soluble in water and ethanol aqueous solution, insoluble in organic solvents. Its color tone and stability are almost unaffected by pH value.
Gardenia blue is not used for direct coloring in food processing. It is mainly used in combination with natural yellow pigments such as gardenia yellow pigment and safflower yellow pigment to mix green pigments of different colors. Compared with extracted chlorophyll, the green pigment mixed with gardenia blue pigment has controllable color tone and good acid resistance, and can be used in acidic foods and beverages. In addition, gardenia blue pigment can also be mixed with various natural red pigments to mix different shades of purple. Therefore, gardenia blue pigment has a wide range of applications in food processing.
