Monascus Red is produced by microorganisms of genus Monascus.It is water douzble and ontained from mixing monascus with steamed rice by method of liquid deep fermentation at controlled temperature,without addded any chemical additive. As it has natural and strong coloring ability,it is more and more widely used in meat products,drinks,and bakery.
