The main coloring component of radish red is anthocyanins of pelargonidin. GB 6718-1986 standard solution is applicable to the radish red product made by spiral pressing, vacuum concentration and spray drying of red radish. It is used as a pigment in the food industry.

Radish red is a dark red amorphous powder, which is easy to absorb moisture and clump after moisture absorption, but generally does not affect its use. It is easy to oxidize. Sunlight exposure can promote its degradation and fading. It is easily soluble in water and ethanol aqueous solution, and insoluble in non-polar solvents. The maximum absorption peak of the aqueous solution of this product shifts back with the increase of the medium pH, and the absorbance decreases significantly. The color tone of the solution is presented in the order of orange-red-pink-bright red-violet with the medium pH 2.0~8.0. Its aqueous solution is unstable to heat, and the degradation is accelerated with the increase of temperature, thus fading. Cu2+ can accelerate its degradation and turn it blue; Fe3+ can turn its solution into rust yellow; Mg2+ and Ca2+ have little effect on this product; A13+, Sn2+ and ascorbic acid have a protective effect on it.

Radish red can be used in appropriate amounts for fruit juice (flavor) beverages, blended wines, candies, jams, sauces, candied fruits, pastry decorations, pastries, ice cream, popsicles, and jellies according to production needs. Other practical references: for beverages, it is 0.002%~0.07%; for candies, it is 0.01%~0.06%; for biscuits and pastries, it is 0.04%~0.08%. This product is not very stable to medium pH, metal ions (especially Cu2+, Fe3+), oxidants, and sunlight. Ascorbic acid has a protective effect on this product. This product is suitable for coloring acidic and low-temperature processed foods, especially for coloring cold drinks and cold foods.
