Gardenia blue is a natural food color extracted from the fruit of gardenia, a plant in the rubiaceae family. The main components of gardenia blue are carotenoid crocetin and croceic acid. Gardenia blue pigment is light gray to dark blue powder or liquid, soluble in water, aqueous ethanol and aqueous propylene glycol and other hydrophilic solvents, insoluble in organic solvents.
Gardenia blue is not much direct coloring in food processing, mainly with natural yellow pigments such as gardenia yellow pigments, safflower yellow pigments and so on, the preparation of different colors of green pigments, compared with the extracted chlorophyll, the green pigments prepared with gardenia blue pigments can be controlled, good acid resistance, can be used in acidic foods and beverages. In addition, gardenia blue pigment can also be combined with a variety of natural red pigments to deploy different shades of purple. Therefore, gardenia blue pigment has a wide range of applications in food processing.

Function and Application:

Soluble in water, insoluble in more than 30% of ethanol, ether, and petroleum ether and otherorganic solvents. The maximum absorption wavelength in aqueous solution is 590nm. Good heatand light resistance, stable to metal ions. Tinting strength is strong. The stability is much better thanchlorophyll. Blue is stable at Ph 4~ 8, reversible condensation occurs at Ph 3, and bluish purple isstable at Ph 9. No adverse reactions were observed in toxicological tests. The oral LD5016.7g/kg orats was obtained, and ADl did not require special provisions.

Gardenia blue is mainly used for coloring hard candy, pectin, agar-agar, pudding, Massimaro sugar,cookies, mufin, cake prefab powder, cream, ice cream, dairy products, vegetables, green beans andother canned,beverage, fruit juice, etc., as a blue coloring agent.
