Alitame is a derivative of the condensation of L-aspartic acid and D-alanine. It is heat-stable and can be used for baking foods. It is also stable to pH, non-toxic and odorless.

Alitame is a new generation of high-intensity, low-calorie sweetener. It has the sweetness and flavor of sucrose, and also has the characteristics of high sweetness, good stability, low calories, high solubility, good physical properties and high safety. Its sweetness is 2,000-2,900 times that of sucrose. Compared with the sweetness of 10% sucrose solution, Alitame is 2,000 times that of sucrose; compared with the sweetness of 2% sucrose solution, its sweetness is 2,900 times that of sucrose. In addition, its sweetness is also 7 times that of saccharin, 12 times that of aspartame, and 50 times that of cyclamate. In terms of taste, its sweetness is similar to that of sucrose, without any bitter, metallic or other strange taste.

Due to its high stability, Alitame can withstand pasteurization, will not be hydrolyzed, and its sweetness will not decrease. It is suitable for different processing techniques and storage conditions. At room temperature and in a solution of pH 5-8, its storage half-life is 5 years; and in a solution of pH 3-4, its storage half-life is 1-1.6 years. In addition, when Alitame is heated to 100C in a 0.01% aqueous solution of 0.01mol/L phosphate buffer (pH 7-8), its sweetness remains unchanged within 30 minutes, which shows that it is relatively stable and can be widely used in a variety of foods and beverages. my country's "Food Additives Hygienic Standard" (GB 2760-1996) stipulates that the maximum usage for beverages, ice cream, and popsicles is 0.1g/kg; gum, tangerine peel, plum, and dried bayberry is 0.3g/kg; table sweeteners are 0.015g/pack (or tablet).
