It is also found in small amounts in fermented foods such as wine, beer, soy sauce, and Japanese sake. [1] It can be obtained by fermenting glucose. Erythritol has good crystallinity and extremely low hygroscopicity. It does not absorb moisture even when the relative humidity is 90%. It is very stable to heat and acid. The solubility of erythritol is low, only 37% at 20°C. When dissolved in water, it absorbs more energy, and the heat of dissolution is -97.4J/g.
The sweetness of erythritol is 70% to 80% of sucrose. It has a light taste unique to sugar alcohols, and its sweetness stays in the mouth for a very short time. When mixed with some high-intensity sweeteners such as aspartame and acesulfame potassium (AK), the sweetness and taste are very close to sucrose. Crystallized erythritol feels cool when eaten. The heat of dissolution of erythritol is approximately 3 times that of glucose and 2 times that of sorbitol.

Erythritol has strong heat resistance and will not decompose or discolor even under high temperature conditions. Erythritol will not undergo the Maillard reaction when it coexists with amino acids.
Erythritol has extremely low hygroscopicity, the lowest among sweeteners such as sugar alcohols and bear sugar. In an environment with a temperature of 20°C and a relative humidity of 90%, the moisture absorption and weight gain after 5 days are about 40% for sorbitol, 17% for maltitol, about 10% for sucrose, and less than 2% for erythritol.

The solubility of erythritol is 36% at 25°C, which is 1/2 of the solubility of sorbitol. This solubility will not cause problems in general food processing, but for some foods that do not want sugar alcohols to precipitate crystals, erythritol must be used in combination with other sugars or sugar alcohols. Its solubility in water is greatly affected by temperature. It is about 75% at 80°C, which is similar to sucrose, and drops to 35% at 20°C, which gives it good crystallinity and powdery properties, making it suitable for replacing sucrose in foods that require sucrose crystallinity. Erythritol can absorb a lot of heat when it dissolves. Its heat of dissolution in water is about 3 times that of glucose and 1.8 times that of sorbitol. Even when mixed with sucrose, its heat of dissolution is still relatively high.
